8 x Tablespoons of Plain (sifted) flour
2 x Tablespoons of good quality Peanut Butter
2 x Tablespoons of caster sugar
1 x large egg yolk
50g of softened unsalted butter

1. This is a really easy recipe. Firstly heat your oven to a
temperature of 180 degrees or 350f.
2. Sift the flour into a large bowl and place the egg yolk,
caster sugar, softened butter and Peanut Butter. Combine well
until it reaches a smooth doughy consistency.
3. Dust your hands with a little flour and break off small
golf ball sized pieces and roll into balls.
4. Place the small balls onto a baking sheet lined with
parchment paper or greaseproof paper and lightly press each one
with the back of a fork across and lengthways giving the
appearance of a forked cross on the top of the cookies.
5. Pop into the hot oven for 8 - 10 minutes. You want the
cookies to be just starting to brown.
6. Once cooked, take the cookies from the baking sheet and
place on a wire cooling rack for a few minutes.
7. Dust with a little icing sugar and serve immediately.
